Honey doesn’t just taste great, some varieties that are mostly from a single type of plant acquire medicinal properties from that nectar too. Jarrah honey, produced by Eucalyptus marginata of the Darling Ranges – Western Australia, is up to 3 times higher in antioxidants than Manuka honey. When applied to the skin these can assist in cell renewal.
Jarrah has the additional benefit of being higher in fructose than glucose when compared to other honeys, making it a low Glycemic Index (GI) honey. This means that it is less likely to spike blood sugar levels for people who enjoy eating it.
As a wound healing honey, Jarrah honey has consistently produced high Total Activity (TA), with values at times 30% higher than the famous Manuka honey. These were determined by a phenol equivalence test, in which samples of honey are compared to phenol (a known antimicrobial agent) to see how far away from the honey sample the bacteria start growing – the further away the better! The Total Activity rating will be made up of a combination of peroxide activity from honeybee enzymes and non-peroxide activity from the unique chemicals that make up Jarrah nectar.
Although all honeys have some residual activity due to their osmotic effects on bacteria, this Jarrah Honey is beyond the range of measurement for the test and given the highest rating for the state at TA 35+.
